Egg Mash

img_7993Ingredients:

  • Whisked 3 Eggs
  • Diced Onion
  • 1-2 tbsp Southern Thai Chilli Paste (in Thai: Kuo Kling)
  • 1 tbsp Minced Green Chili
  • 1 tbsp Fish Sauce/Soya Sauce
  • 1 tbsp Oyster Sauce
  • 1 tbsp Sugar
  • Kaffir Leaves

Directions:

  1. Whisk eggs and keep aside.
  2. Stir fry minced green chili and curry paste on medium heat.
  3. Add onions and sauté.
  4. Pour whisked eggs and stir till cooked well. Scramble the eggs.
  5. Season with fish sauce, oyster sauce and sugar. Mix well.
  6. Put 4-6 kaffir leaves then add water for gravy.
  7. Mix mix for a minute and Serve!
